How a Family Runs the Greenest Hotel in the World
Organic breakfast from the Black Forest, solar system on the roof, environmental awards under their belt: The Best Western Premier Hotel Victoria in the heart of Freiburg combines four-star comfort with genuine environmental protection. Since the 1980s, Astrid and Bertram Späth have been running their "Green Hotel" with the highest degree of ecological responsibility in all areas and as a sustainable family business. The Späth couple believes in long-term planning, sustainability, and intergenerational thoughts. To continue this sustainable journey, their son Johannes joined the business a couple of years ago as the fourth generation of hoteliers.
Hallmark: Energy Management
Excellent environmental management is key at the Best Western Premier Hotel Victoria in Freiburg. The Green Hotel is one of the most environmentally friendly private hotels in the world. More than 30 years ago, the 64-room hotel set its course for environmental protection. The Späth family who own the hotel have been recognized for their outstanding engagement with numerous prizes and awards. "We are convinced that the protection and care of our common environment are the prerequisite for our future. For us, environmental protection in our hotel means careful use of resources, avoidance of harmful products and the use of renewable energies while maintaining a top quality at the highest level of comfort for our guests," explain Astrid and Bertram Späth.
The highlight can be found on the roof: The "Energy Design Hotel" is proudly presenting its energy roof garden to their guests; complete with a solar crown, four round wind turbines and a large area of solar panels. The four rotors of the wind turbine and the "solar attic" with a power of 22 kilowatts produce energy which can be directly fed into the system. In total, the energy rooftop garden produces around 20,000 kilowatt hours of solar and wind power each year – an amount sufficient to supply all rooms with electricity. The remainder is obtained through the participation of the Späth family in the Ettenheim wind power plant and through purchased green electricity from renewable sources in the region.
Green Details from Facade to Hotelbed
A second building with 36 rooms was built in 2009 according to passive house standard. This extension even offers shelter for feathered guests as nesting sites for swifts were created on the facade. Two of the three hotel buildings are fitted with 24-centimeter-thick thermal insulation. This reduces thermal energy requirements by 66 percent. Triple thermal glazing prevents energy loss. The air conditioning and ventilation of the guest rooms is provided by an actively regulated supply of fresh air using a ventilation element, with extraction via the bathroom. Groundwater cooling is used to operate the air conditioning units. The guest rooms are heated in a climate-friendly way, with hot water generated via solar collectors on the roof, and by burning wood pellets.

Involving Staff Is Key
The Späth family is also dedicated to fostering environmental awareness among its employees. Training courses are held where employees learn about topics such as waste separation, waste avoidance cycles, energy accounting or environmentally friendly cleaning processes. Staff are constantly encouraged to make and implement suggestions for improvement. Even the smallest ideas are submitted for monthly discussion, and 90 percent are implemented immediately or within a short period of time. Moreover, visits to leading sustainable companies are also on the agenda to gain valuable insights and fresh inspiration. To make travelling to work more climate friendly, every employee receives a free regional public transport pass every month.
150 Years of History in the Heart of Freiburg
Together with the construction of the Eisenbahnstrasse (Station Road) as a connection between the city and the train station, the Hotel Victoria is built in 1870. Although the original building has been extended over the years, it is still preserved in its original appearance today – because the sustainable principle of modernizing rather than replacing old things has been followed, even if this means some challenges. In 1939 Markus Späth, the grandfather of the current owner Bertram Späth, buys the hotel and adds a kitchen and restaurant. During the Second World War and the Occupation, the hotel is temporarily used as a wardroom. 150 lunches have to be cooked daily. During this time, a second restaurant is built on the second floor, which is later converted back into rooms. Owner Markus Späth is spoilt for choice at the end of the 1950s, when two potential buyers are interested in his property – and finally decides in favor of the family business which is taken over by his son Karl Späth in 1964. Under his leadership, the restaurant with chef Hans Rudolf Treichler earns the first "Gault Milliau Star" in Freiburg. An elevator is installed in the hotel – a very progressive feature back then. In 1980, the hotel underwent another major renovation: the current building section 2 was constructed with 32 new rooms and a laundry that was state-of-the-art at the time.
Today's hosts Bertram and Astrid Späth, the third generation of the family, join the management in 1985. New ideas for environmental protection and new concepts emerge. In 1989, the Victoria hotel bar is converted into the "Cocktailbar Hemingway" which is still considered the cradle of Freiburg's cocktail scene. At the same time, the second floor in the historic building is renovated and all rooms receive their private bathrooms. Under Astrid and Bertram Späth, the existing building, which was already over 100 years old in the 1980s, is transformed together with its extension into a holistically green, sustainably managed hotel.
The Best Western Premier Hotel Victoria in Freiburg celebrated its 150th anniversary in 2021. For decades, the family-run hotel represents comfort and sustainability.

"Since 1985, we have been demonstrating that four-star comfort and ecological responsibility can certainly be combined. For example, with 100 percent renewable energy and zero emissions, with heat from wood pellets and cooling sourced from groundwater, with regional organic breakfast without packaging waste. Above all this we offer a certain way of ease, a certain lightness and a vacation feeling for our guests," say Astrid and Bertram Späth. According to the Späths' vision, luxury and guest comfort always come first, and so the hotel combines the best of both worlds.
In addition to the numerous renovation measures serving environmentally friendly operation, the guest rooms and the public areas have been renovated and modernized repeatedly over the years. Among other things, a spacious junior suite was created from two single rooms in the historic old building. For the 150th anniversary during the pandemic, when the hotel had to close its doors for six months for the first time in its history, the lobby on the first floor was expanded. Here, the next intergenerational project is currently being created under the supervision of Johannes Späth: a guest lounge in a "living room atmosphere" with comfortable seating, bookshelves, free daily newspapers, coffee machine and beverage stations – a place that is to become the central meeting point for socializing for all guests in the hotel. And Johannes Späth continues the sustainable family philosophy while remaining modest: Regarding the hotel's numerous environmental awards, he says: "The awards only show the way, but are not the goal. We continue on our sustainable path firmly and with great joy."
